The Good
It was an interesting start with the coffee cured salmon. The thin and delicate salmon was beautifully cured, and offered up an impeccable combination of rich, dark coffee and fresh seafood. Served slongside was the tangy and incredibly crunchy pickled vegetables and sesame rice crisp that added a welcoming crunch element.
We also enjoyed the Mojo Gardening. The unique presentation made way for an arguably just as unconventional combination of flavours and ingredients. The components worked incredibly well together, as the light yet creamy buffalo mozzarella was juxtaposed by the coarse olive soil, while the earthy beetroot jelly went incredibly well with the smoked potato.
The Scotch Fillet was just sensational. Having been sous vide the. seared on charcoal, the protein appeared to be fully cooked yet remained incredibly tender and juicy. The flavoursome, quality beef most definitely delivers on flavour, and topped liberally with a divine cheese sauce that offered up plenty of flavoursome goodness, this steak can be best compared to having a cheeseburger without the bum. The double cooked chips served alongside added a nice crunch component, and was the perfect way to round off the dish.
We also enjoyed the Confit Duck. The double cooking allowed for a amazingly juicy and tender inner, encased in a skin that was both crunchy and crispy. This was well complemented by a sweet and savoury jous, as well as a textured potato gratin and shredded cabbage.
We also enjoyed the bouillabaisse. The stunning presentation made Wah for a incredibly flavoursome meal. The tomato base was rich and fragrant, and was liberally filled with an abundance of fresh quality seafood. The barramundi was firm yet tender, while the clams were incredibly soft and juicy. Contrasting this were the two sticks of toasted baguette, which served as the perfect sponge for soaking up the delicious juices.
We concluded our meal with the Forest Floor. The highlight was of course the matcha sponge cake that was ever so fluffy and moist, with a beautiful matcha flavour that was well contrasted by the coarse crunch of the chocolate soil. The raspberry sorbet offered up a refreshing sensation, which was made special thanks to the occasional popping candy bursting in your mouth.

White Mojo almost never fails to surprise. The impeccable execution and interesting, unique combination of flavours and ingredients make every bite as excitable as the next.
You never quite know what to expect on your plate despite the detailed menu description. However you can be rest assured that the well intriguing flavours and well-balanced textures in every single dish will make you keep wanting to dig in for another bite.
