The Good

We started off with the Slow Braised Octopus and were immediately impressed. Revealed with much dramatic fanfare, the smoke rose from the clay pot as the lid was lifted, unveiling an exceptionally soft and tender octopus tentacle, slow braised in a fragrant tomato base. The protein was just heavenly, so soft and juicy and almost melted in your mouth. This was well complemented by cubes of flavoursome chorizo, and was just heavenly when combined with a crusty, crisp garlic bread that’s baked fresh out of the oven that perfectly soaked up all the juices.

We also enjoyed the Sous Vide Salmon. The salmon itself was cooked flawlessly, with a bright pink appearance that made way for an incredible experience. The protein itself was silky smooth, without so much of a hint of dryness at all. The beautiful salmon flavour was well complemented by the cucumber and fennel pickle that offered up a slight tang and plenty of refreshing goodness.

The Spiced Pork Pizza certainly didn’t disappoint either. Straight out of the wood-fired oven, the puffy crust made way for a thin and fragrant base. This was topped with a tender and succulent whiskey braised, pulled pork shoulder that was bold and forward, with a hint of sweetness throughout. Contrasting this was the sudden kick of chilli, burning sensation from the exceptionally spicy salami. Fortunately though, the generous helping of fior di latte dulled down the spice and made it an enjoayble experience overall. Our only gripe with the pizza would be the dough itself, which was unfortunately rather chewy after the initial crispness had gone.

The Verdict

Abacus still remains one of our favourite eateries in South Yarra. The stunning, open space, coupled with a creative and unique menu that is well-executed, artfully balancing the different flavours and textures of various ingredients, all made for a very enjoyable and satisfying meal.
