The Good
We were off to a tasty start with a trio of entrees.
Our favourite of the bunch was of course the La Lot. The carefully stacked tower it beef wrapped in betel leaf was absolutely stunning. Within each roll, the beef was so tender and juicy, nicely seasoned and was just incredibly aromatic.
We also enjoyed the Satay Chicken Skewers. The slight crisp outer was smothered in an appetising and nutty satay sauce.
Our mains consisted of East Meets West, as well as the Insane Fish. Creative names aside, these dishes were as delicious as they sound.
East Meets West was a platter loaded with marinated, grilled chicken paired with a light salad and fish sauce. The chicken was simply flawless, it’s lightly charred outer sealed in an inner that was well-marinated with plenty of lemongrass, garlic and chilli. This of course made each tender and succulent piece of meat irresistible and so incredibly appetising.
The Insane Fish as recommended by owner Tian, was just incredible. The sizeable fish fillet was fried to a perfect crisp. The crunchy outer skin was perfectly juxtaposed by the soft, delicate inner. This was served with a sweet, tangy and slightly sour fish sauce to create the perfect balance in flavours and textures.
We paired all of this with some Fried Rice and Chinese Broccoli. The Fried Rice was beautifully fragrant. The crumbly rice was nicely accompanied by the usual suspects of scrambled eggs and shredded veggies, as well as prawns, shredded duck. The Chinese Broccoli was fresh, lightly wok fried with some garlic to create an aromatic experience.

The Verdict
Situated in the heart of Melbourne’s Vietnamese community, Minh Minh Saigon Soul features an absolutely buzzing atmosphere paired with amazing, modern and delicious Vietnamese cuisine.
Despite the modern presentation and creative interpretations, the flavours definitely reminded us of the light, refreshing flavours from all over Vietnam.
