We were off to a tasty start to our lamb feast with the Twice Cooked Honey Lamb Ribs. With a slight, crisp outer, the beautiful sweetness thanks to the honey glaze worked remarkably well with the savoury lamb protein. The protein was cooked to perfection, with a good balance of fat and lean that provided an incredibly juicy and flavoursome experience.
We then dug into the Lamb French Rack. The lamb cutlets were wet aged for a total of 89 hours, making for an incredibly succulent and tender experience that was full of flavour. Cooked on a charcoal grill at your table, the meaty cutlets exhibited a slightly charred outer as well as caramelised bits of fat that made for an incredible aroma and beautiful, bold lamb flavours.
The skewers were of course the signature items of Yang89 and we simply could not wait to devour them. The crowd favourite was undoubtedly the Lamb Shoulder Skewers. Well balanced in lean and fat, the tender and succulent protein was of course beautifully juicy and full of flavour thanks to the fattier bits. Cooked on the automatic rotating charcoal grill ensured a uniform and even searing, with the lightly charred bite offering a slight crispness. This was exceptionally irresistible when combined with their house made Spicy Cumin Seasoning, proving incredibly fragrant and slightly spicy. Cumin and lamb is really a match made in heaven.
Not to be missed was the Chicken Skewers. The chicken was marinated in a slightly sweet soy, nicely accompanied by leek that offered up juicy freshness. Meanwhile, the Pork Neck Skewers offered a slightly crunchy quality thanks to the special cut of the protein, and it’s flavours were enhanced by their house made Miso Sauce.
