The Good
We were off to a brilliant start with The Bush Pizza. The beautifully puffy crust exhibited plenty of charred heatspots. The light, fluffy texture was nicely complemented by the fragrant and slightly chewy dough. This made way for a thin yet crisp base that held its structural integrity well. The toppings were definitely tasty thanks to the juicy variety of mushrooms that was complemented by chunks of light yet milky buffalo mozzarella. Coupled with shaved Grana Padano and finished off with the aromatic truffle oil, this pizza most certainly satiated our tastebuds.
We also enjoyed The King Panuozzo. It’s definitely our first try at a panuozzo, and according to the menu, “It’s a long piece of fresh pizza dough that is baked over 400° of temperature. It is then cut in half and stuffed with delicious fillings”. And delicious fillings it was! The shredded Italian pork sausage carried plenty of porky flavour, nicely accompanied by the earthiness of traditional Wild Friarielli (Italian Broccoli). Meanwhile, the smoked smoked scamorza cheese added a hint of smokey creaminess, though we could’ve definitely done with more cheese.
The Mediocre
Being a takeaway order, anything fried obviously did not do so well. I’m sure the Montanara Bites would’ve been absolutely irresistible fresh, but unfortunately these gorgeous pieces of bite sized, fried pizza dough failed to translate in a takeaway setting. After sitting in the box for 15 or so mintues, they were chewy and tough. Fortunately, the flavours were great and definitely helped by the fresh cherry tomatoes, rocket and parmesan. An interesting take on the bruschetta and definitely worth trying in-store.

The Verdict
While there’s no shortage of Italian food in Melbourne, we are glad to welcome the opening of one that dishes up authentic, traditional Southern Italian pizzas!
Not only was their pizza dough spot on, the flavours, toppings and execution were top notch too.
Would Penguin Eat Again?
