The Good
We were off to a pleasant start to our dinner with the Garlic Prawns and Lamb Cutlets. Beautifully presented, the chargrilled cutlets exhibited beautiful charred, crisp outer that was grilled to absolute perfection. The turmeric and cumin marinade added a fragrant depth in flavour to the delicious, succulent lamb. Offering plenty of flavour and amazing juicy sensation, the cutlets were well paired with a zesty garlic yoghurt that nicely rounded out the fattier bits.
Meanwhile, the very aromatic Garlic Prawns were a delight. The king prawns were sizeable and fresh, offering a beautiful crunch that was nicely paired with a fragrant tomato-based sauce. The bits of chorizo throughout added hints of savoury goodness, and the herby sauce was the perfect accompaniment to the toasted ciabatta.
Our favourite of the evening must be the Blue Swimmer Crab Linguine. Made in house, their fresh linguine was cooked just right, on the softer of al dente which was perfect for our palate, and beautifully coated in an abundance of garlic white wine sauce. The fragrant sauce was made even tastier with a generous helping of blue swimmer crab, as well as the occasional chilli that spiced things up. This was certainly one of the tastiest and well-balanced seafood linguine we’ve come across, and no doubt is the most popular dish at Saros.
The Hanger Steak did not disappoint either. Elegantly presented, the giant platter was beautifully plated with cuts of medium rare hanger steak. While the cut is known to be a tougher and chewier cut, it offers more intense flavours and a juicier experience. The flavours here were definitely bold and forward, though even at medium rare, this particular steak was tougher than expected. The amazing mix of herb and garlic garnish on top added a lovely dash of freshness zesty goodness to each bite, while the cauliflower puree provided a creaminess without being overly rich or heavy.
We rounded off our meal with the Mango Parfait and the Pumpkin Catalan Cream. Offering a refreshing yet satisfying option, the Mango Parfait was light and tasty. The Parfait carried a forward mango flavour with well-behaved sweetness, pairing perfectly with the creamy coconut ice cream. An instant classic.
Meanwhile, the Pumpkin Catalan Cream reminded us of a creme brulee. The blowtorched, caramelised top gave way to a rich, creamy custard. The custard offered up an indulgent sweetness with just a hint of pumpkin, and we found the tartness of the macerated raspberries served alongside nicely rounding out the dessert.

The Verdict
Situated within the newly opened Sebel Hotel in Moonne Ponds, Saros Bar and Dining offers an upscale dining experience that’s characterised by fresh, quality ingredients and refined execution.
Their gorgeous fitout features a full bar, complete with an extensive drinks list and cocktails to pair. For a relaxed and indulgent Modern Australian, Saros should definitely be on your to-do.
