The Good

It was off to a tasty start with the Truffle and Hash Scramble. The scrambled eggs were simply divine, so silky smooth and fluffy, with a beautiful truffle sensation throughout. Underneath sat the thick and hefty potato hash, with a thin it crisp outer making way for such a soft, comforting inner. All held together with a delightful truffle mayo and with sautéed mushrooms dotted throughout, this one flavoursome breakfast dish certainly impressed.

We also enjoyed the Pork Sandwich. The stunning sandwich had an amazing contrast in colours. Standing front and centre was of course that beautiful crumbed pork cutlet, with an exceptionally crunchy outer and a juicy, beautifully fatty inner that was just bursting with flavour. This was accompanied by a delicious tonkotsu sauce and crunchy Apple slaw. However the charcoal sourdough felt a tad too dense and tough for our palate, and we felt the sandwich could’ve benefitted from a softer, fluffier bread.

We rounded off our meal with the famous Taiyaki Waffles. The impeccable presentation made way for a sensational dessert dish. The Taiyaki themselves were perfectly made, exhibiting an excitable crisp outer that led to a soft and fluffy inner that was filled with a berry purée. With plenty of chocolate soil sprinkled around to give it a burst of sweetness, and held together by a pleasantly sweet Murasaki ice cream, this well-balanced dessert did not disappoint one bit!

The Verdict

Not only are the dishes universally photogenic and most definitely Instagram-worthy, Project 281 seems to have found the perfect balance of form and function and created some absolutely stunning dishes with taste to match.

With a relaxed atmosphere and plenty of greenery dotted an industrial fit-out, we can definitely see ourselves lazing the morning away at this amazing all-rounder.
