The Good

We were off to a stunning start to our meal with the “Let’s Make Some Smoke”. With a brilliant smokey aroma wafting out from underneath the glass dome, the gorgeous twice cooked king salmon was revealed. The vibrant red colour of the fish fillet made way for an incredibly succulent and pillowy soft texture that simply fell apart with the push of the fork. The bold smokey flavour was forward, which was balanced by the light, crunchy asparagus and the tangy pickled carrots. With a beautifully runny 62degree egg and a spicy umami mayo holding it altogether, this dish certainly tickled all our senses.

We also enjoyed the Exotic Mushroom With Egg Custard. Served in a cute stone dish, the silky egg custard was loaded with an excellent variety of mushrooms. The favourite was definitely the meaty, chunky king oyster, followed by juicy shiitake and crispy enoki. With a hint of truffle throughout and coupled with shavings of black garlic, this was an exceptionally fragrant and aromatic dish that just kept on begging for one more bite.

The meal concluded by the generously sized Hotcake. With a slight crispness to its outer and filling its bowl right to the brim, the thick, fluffy hotcake was at least an inch thick and tasted absolutely sensational. It was topped with a generous helping of slow cooked apple and blueberry gel providing a balanced sweet and tangy flavours. Meanwhile, the caramelised grains added an exceptional crunch element that perfectly juxtaposed the softer elements. All tied together with a divine butterscotch sauce that added an intense hit of sweetness, this was one hotcake to remember for the times.
