The Good
We were off to a wholesome and hearty start with the Corned Beef and Kale Salad. The vibrant red of the corned beef strips were beautifully contrasted by an abundance of green kale leaves. Lightly sauteed, the crisp leaves were accompanied by plenty of sweet roasted peppers as well as cherry tomatoes. Alongside sat crispy capers and tangy firkins, all on a bed of grainy black rice. Tying it altogether was the rich and creamy cocktail sauce, which at times did feel a bit too heavy for this salad.
We also enjoyed the Mushroom Parmy. The roasted mushrooms were of course the highlight of the dish. The meaty and juicy mushrooms were bold and flavourful, nicely baked with melted bocconcini, as well as a zesty pesto sauce. This was nicely accompanied by sauteed spinach and fresh cherry tomatoes, which was drizzled with a delightful balsamic glaze. All served on a fluffy crumpet, this was a tasty yet refreshing dish that delivered plenty of flavour.
The Tropical Pancakes certainly didn’t disappoint either. The pancakes were hidden underneath a generous scoop of vanilla ice cream and plenty of fairy floss. The pancakes themselves were delicious, aptly fluffy and spongy, perfectly soaking up the sweet and zesty lime and mango curd. With toasted walnuts scattered around providing crunch, and a lovely homemade jam adding a fruity sweetness, this was a sweet treat that did not disappoint.

The Verdict
Our Little Ray of Sunshine perfectly encapsulates the beautiful sun-kissed bayside suburb of Sandringham. The fresh ingredients, vibrant colours and bold flavours all made for a pretty satisfying meal.
