The Good
It was a brilliant start to our breakfast with the In Bloom with Grilled Salmon. Beautifully presented, the colours of pink beetroot hummus perfectly juxtaposed the vibrant and fresh greens of kale, snow peas and broccoli. The crunch of the fresh veggies were nicely accompanied by two perfectly poached eggs with exceptionally runny yolks, topped with a long strip of tender grilled salmon. Simple yet delicious.
We also enjoyed the Ba Ba Lamb. Served on roasted Turkish Bread, the slow cooked pulled lamb was succulent and tender. With light seasoning and a good lamb flavour, the delicious protein was nicely accompanied by two sunnyfried eggs, and all held together by an earthy humms. This was of course served on a thick slice of Turkish Bread that soaked up all the beautiful juices of the lamb. Delicious.
We concluded on a sweet note with the Banana Loaf. Sitting atop was the beautiful caramelized banana offering a bold hit of sweetness. Underneath, the banana bread was soft and pillowy, aptly moist and nicely held together. Topped with a generous dollop of mascarpone and drizzled with maple syrup, this was one that’s bound to satisfy any sweet tooth.

The Verdict
Launching a brand new menu, Co Cafe offers up a tasty and creative alternative to the local brunch scene of Sandringham. With complimentary flavors and diverse textures, the dishes here not only looked the part, but also satisfied as well.
